Why is it that from 2004 to 2010, the gluten-free food industry has grown at a compounded annual rate of almost 30 percent? Probably because 1 in 133 persons is now being diagnosed with a condition known as celiac disease. Patients with celiac disease are unable to tolerate a protein called gluten, which is found in the grains wheat, barley and rye. The inability to digest these grains when eaten leads to inflammation of the small intestines manifested by destruction of microscopic hairs, called “villi,” lining the small intestines. Without these villi, the patient is unable to absorb vitamins, minerals, and other vital nutrients, and malnutrition and anemia ensue. Young children who develop celiac disease are particularly vulnerable as their growth and normal development can be stunted.

Janet Liffiton passed away peacefully on May 18. She resided in Ahwatukee and is survived by her daughter, Nancy Breon, and husband, Mike, of Kailua, Hawaii; son, David Bartram, and wife, Tamie, of Poway, Calif.; niece, Kim Rolfe, and husband, Rick, also of Ahwatukee, as well as several nieces and nephews scattered across the East Coast.

Summertime is burger time. And it’s so easy to throw a few beef patties on the grill. Not much is required in the way of embellishment, yet they have a big happiness return. What’s the magic ingredient? Fat, of course. Beef burgers are high in fat, which guarantees flavor and juiciness. And because fat enhances flavor, it also makes anything else you put in or on the burger taste better, too. Heartbreakingly, as you decrease the fat content in a burger, its flavor tends to go bye-bye, too. This is a real problem if you want to dig into a delicious burger and still want the blood to continue sailing through your arteries. The solution? Turkey. I know. I know. You’ve tried turkey burgers and it was like eating wet cardboard. Hah! But you haven’t tried my turkey burgers... Let’s start with the basic ingredient — ground turkey. While researching this recipe, I discovered that the labels on ground turkey can be quite confusing. You’d figure that a package labeled “lean” would mean what it says. Weirdly, it turns out that the calories and fat in a 4-ounce portion of “lean” ground turkey can range from 120 calories with 1 percent fat to 160 calories with 12 percent fat (which is as rich as a lean beef burger). As always, it’s best to read labels and not rely on words such as “lean” or “white meat” when looking for healthy choices. Or, better yet, grind your own turkey. Start by buying a small package of turkey tenderloins, the flap of meat that lies just under the breast. As little as a 1 1/2 pounds of turkey tenderloins can be ground to produce six burgers. Cut the tenderloins into 1-inch cubes and freeze them for 30 minutes. Pop them in a food processor and pulse until they achieve a medium-grind consistency. Now we come to the crucial part of the recipe, the part I call Turkey Helper. The blandest and driest of white meats, turkey cries out for flavor and moisture. Happily, any number of vegetables can answer this call, including sauteed onions, bell peppers or mushrooms, shredded raw Napa cabbage, or carrots.
After reading that the Senate has passed a bill to have online retailers charge sales tax exactly the same as brick and mortar businesses, I am hopeful that Congress will see the impact this will have on their communities. Small businesses have suffered and many have closed because people can save tax dollars by purchasing online. In fact, many people use local retail businesses as testing grounds for whatever they want to buy online. While we all love the idea of getting a deal, it shouldn’t be done on the backs of our local retail businesses. If the same tax is charged online as in person sales, both types of retail would be better served. I hope our Congressmen will realize that when the issue comes to a vote.
Local churches in Ahwatukee Foothills are keeping their heads above the sea of technology with the use of iPhone, Android and tablet apps for their members. Along with the surge in use of Bible apps, online podcasts of sermons and social media, non-denominational Christian churches as a whole are remembering that relevancy is key. Pastor Jeff Zubeck of Living Word Bible Church said “keeping up with the times” is key, though the larger scope of the church shouldn’t change the main message, just the method of delivery. Whether in church services or at home, members and attendees of Mountain Park Community Church can literally have their church in their pocket.
Americans are more confident in the U.S. economy than at any point in the past five years, thanks to surging home values, a brighter job market and record-setting stock prices. Stock averages last month extended the year’s explosive rally. Further gains in consumer confidence could help the economy withstand the effects of higher taxes and federal spending cuts that kicked in this year. After seeing her daughter, Delilah, graduate from preschool at the Foundation for Blind Children’s Chandler campus, one mother stood up and recited a poem for parents, staff and students on Thursday. “The crooked stem no longer mattered, no one missed the leaves, all they saw was the exquisite rose, that someone was a teacher and that rose was my daughter.” Moved with compassion and empathy, several parents wiped away tears at the Cooperative Preschool for the Visually Impaired during the small ceremony at the campus on Warner Road near the Loop 101. Parent Christine Knots said the growth she has seen in her son, Cameron, this year has been huge. Cameron, 5, who has been visually impaired since birth, now dresses himself, feeds himself, uses a Braille writer everyday, and started potty training earlier than expected. “He’s so independent now,” Knotts said. The foundation graduated nearly 40 students from its preschool program around the Valley this past week, with some students now heading to elementary schools in the Kyrene and Chandler Unified school districts. For teacher Jean Murphy, every year graduating her students is unique. “For some reason it’s really hard this year, the changes in the kids have been over the top,” she said, with tears filling her eyes. Murphy said some of the changes included seeing her students walk, learn American Sign Language, improve in motor skills, and more. “It’s just about seeing the light bulb come on and take whatever tiny little step it is,” said Murphy. “It’s always so exciting for me.” Certificates of achievement were handed out to each student on Thursday, along with single, yellow carnations for their parents as a “thank you.” The preschool program packs in a wide array of services to the students in five-hour days during the week. Students are exposed to music, gymnastics, pet, physical and speech therapies as well as social and cognitive development. One of the graduates, 5-year-old Aubrey Brock, could have easily been recognized as “Miss Congeniality,” after running off to the back of the stage giggling after receiving her certificate. Her mother, Aria, said the past year at the preschool has made Aubrey more confident and was truly a “blessing.” “She was already a social butterfly, but I’ve just seen her bloom here and it’s been amazing.” Foundation for Blind Children’s Chandler campus is located at 2005 N. 91st Place.
