WHAT ELSE YOU SHOULD KNOW: Footlong sandwiches for $5.25 are available from 11 a.m. to 4 p.m. Monday through Friday. Delivery is free within a 3-mile radius; there is a charge outside of 3 miles. The store uses only the freshest ingredients, and the dough, sauces and desserts are handmade daily in house. All menu items are made to order. “If we can find a way to make it work, we’ll get you what you need,” Povlitz said.

UNIQUE TIDBITS: Sahtouris and his family are originally from Boston and bring to the Valley their 30 years of experience after owning two restaurants and a bakery in Boston. 

FUTURE PLANS: Povlitz said he hopes to work more with various groups in the city, including schools and the City of Peoria, and to expand catering services. As the business grows, he said he will evaluate additional locations and possibly acquire a liquor license to serve beer.
