Our radar is blinking with a smattering of new eateries set to open in the East Valley.

Smashburger will soon open near Costco on South SanTan Village Parkway in Gilbert, according to the burger chain’s website. Also in the SanTan Village area: Seattle-based MOD Pizza announced via Twitter that it’s set to open in July at the shopping center.

Nourish, where everything is gluten-free, dairy-free, soy-free and peanut-free, opened its second location earlier this year on the northeast corner of Higley and Ray in Gilbert. Now it plans to close its original Scottsdale location and move that eatery to Tempe. The newest Nourish is expected to open sometime in the fall at Southwest College of Naturopathic Medicine at the Loop 101 and Broadway Road.

Meanwhile, Queen Creek fave The Deli is opening a second location in that town called The Bistro. According to its website, The Bistro will open this month at 22721 S. Ellsworth Road. The space will be a specialty coffee and wine bar serving breakfast, lunch and, eventually, dinner.
