Japanese restaurant to combine old and new

The owners of the new Ginban Modern Japanese Cuisine in Ahwatukee Foothills are combining traditional technique with a modern flare.

Chef Kenny Wang, who opened the restaurant with his wife Vivian Cao, has been studying traditional Japanese cooking for years in New York and California. When it came time to open his own restaurant, Arizona seemed like the best place to do it.

“Arizona is expanding,” said Parkin Ying, who has been helping the couple open Ginban. “In Arizona there are a lot of sushi places and Japanese places but they have a lot of the same things on the menu. What he makes is more traditional but his training has been unique. It’s different.”

Ginban Modern Japanese Cuisine took over the location formerly occupied by Mikado Sushi at 3941 E. Chandler Blvd. Suite 107. The space has been completely remodeled to reflect the modern tastes on the menu.

There are more than 20 rolls on the menu that are completely unique to Ginban. Chef Wang said he has created his own special sauces that won’t be found at other sushi places in the Valley. The menu also includes appetizers, soups, salads, rice and noodles, Bento box dinners and traditional entrees like Teriyaki and Tempura.

The restaurant is open for lunch and dinner seven days a week and closed from 3 p.m. to 4:30 every day but Sunday. They have happy hour Monday through Friday from 4:30 to 6 p.m. and 9 p.m. to close.
