Rudy’s BBQ opening 1st location in Ariz. soon

A large red building now visible near 54th Street and Chandler Boulevard is the first of its kind in Arizona, but many area residents already recognize the name.

Rudy’s Country Store and Bar-B-Q is an old-fashioned country store and meat market that began in Texas. The original location, which got its start as a one-stop gas station, garage and grocery store, added barbecue in 1989.

It was featured on the Food Network’s “Best Regional Barbecues,” according to Chad Parrish, a partner in the company. Over the years the chain has slowly been spreading into Oklahoma, Colorado, New Mexico, and now Arizona.

“We have two in El Paso that I’m in charge of and we would have people come down I-10 and stop into our two El Paso stores all the time asking us to come to Arizona,” Parrish said. “When we finally announced that we had bought a site, and began building a building, I never realized how many people from the Phoenix area already knew the Rudy’s name. It was unbelievable the amount of response we’ve gotten on the Internet and Facebook, and calls to the office. People have been wanting to know when we’re opening.”

Parrish said the company searched for about three years before finally locating a spot in Chandler. They removed an old Exxon from the corner at 7300 West Chandler Boulevard, and now after months of building they’re planning on opening the doors on April 5.

Rudy’s is known for its meats, which they smoke with oak wood and slice fresh. The meat is priced by the half pound. Once a meat is selected customers can create their own sandwich or just eat the meat alone.

“I think the way we smoke our meats is unique,” Parrish said. “The brisket is in there for eight to 12 hours overnight. We have great recipes for the seasoning. I think most people will tell you that sauce is the boss. We have a really unique sauce and people just love it, but we also have great dry rubs. It’s not a Southern style or Southeastern style barbecue that has a lot of sauce, it’s dry rub meats and the spices that we use in that are really good. It keeps the meat really juicy and moist.”

While many Rudy’s are also gas stations, the Arizona location will focus solely on breakfast, lunch and dinner. The restaurant opens at 7 a.m. for breakfast tacos.

The new building will be filled with picnic tables indoors and out, making it a good place to stop in for lunch alone or with the whole family, Parrish said. They’ve also built a meeting room for private parties.

The company has already done most of its hiring for cashiers, but may need more cooks before the grand opening in April.
