A national pizza chain known for an impressive array of art and pizza made with high quality ingredients is taking over the space left empty by Rock Bottom Brewery in 2011.
Mellow Mushroom franchise owner Jay Beskind said he’s been interested in the old Rock Bottom location since before the restaurant closed. It has taken close to two years to secure the lease, but he’s confident that Mellow Mushroom will fit right into Ahwatukee Foothills.
There are more than 130 locations of Mellow Mushroom nationwide and three already in the Valley. Beskind says he was sold on the business as soon as he tried the pizza.
“The dough has molasses in it,” he said. “It’s spectacular. It’s the star. We use incredible ingredients. It’s a little known fact that less than 1 percent of pizzas produced in this country use pure mozzarella cheese. We are in the 1 percent. The cheese is outstanding. All the toppings are outstanding, but the star is the dough.”
While the company is known for pizza, Beskind and his son and business partner, Jason, plan to bring a wide array of beers to the restaurant as well. Their other locations in the Valley are already known for carrying exotic and unique beers but because the Ahwatukee Foothills location will be larger, it will have even more room for more beer options. Beskind said there will be 48 craft beers on tap and an additional 60 to 70 varieties served in cans or bottles.
Besides the food, Beskind said none of the Mellow Mushroom locations look exactly the same. Each one is filled with one-of-a-kind works of art to make it stand out. Because of its size, the Ahwatukee location will have twice the amount of art that has gone into the other Valley locations.
“Art is a key ingredient to what the concept is all about,” Beskind said. “We don’t know exactly what we’re going to end up with yet. We’re working on the concept right now.”
It’s unknown when the restaurant will officially open, but Beskind said he plans to employ 80 to 90 people in Ahwatukee.
“We want to provide great food in a great environment with great service,” he said. “We want to be a contributing member of the community and a great addition to the whole scene.”

While Mellow Mushroom, Zipps and Chick-fil-A all plan for big openings in the next couple months two other chains recently closed in Ahwatukee Foothills. Baja Fresh on Ray Ranch Circle and Applebee’s on Chandler Boulevard have both gone out of business in Ahwatukee.
