The Sheraton Wild Horse Pass offers holiday dining options

After all the shopping, wrapping and cleaning for company to come over, who has the energy to cook on Christmas?

Ko’Sin restaurant at the Sheraton Wild Horse Pass Resort is offering special brunch and dinner menus on Christmas Day.

“We all work ferociously leading up to the holidays. let Sheraton Wild Horse Pass Resort accomodate you and your loved ones for relaxation over fine dining,” Stephanie Heckathorne, director of public relations for the resort said.

Brunch will be served from 11 a.m. to 2 p.m. on Christmas Day, featuring mini French-toast sandwiches filled with wild berry compote and pumpkin anglaise, a gourmet omelet station, roasted poblano hollandaise eggs benedict with potato hash, kettle oats and carved Cedar River peppercorn tenderloin of beef. The buffet is $30 for adults, $25 for seniors and $15 for children 12 and under.

Ko’Sin also features a three-course Christmas Dinner from 5 to 9 p.m. Unique menu highlights include cured salmon filled with Iitoi onions, mache salad complete with pickled Wilcox cucumbers, slow-cooked herb-rubbed prime rib, roasted shallot mashed potatoes, agave and sage marinated turkey breast, pan-seared striped bass and for the grand finale, chef’s selection of desserts. The three-course dinner is $60 for adults, $54 for seniors and $30 for children 12 & under.

Both Kai and Ko’Sin will be open on Christmas Eve and extend their traditional dinner menu to guests. Kai will not be open on Christmas Day.

Kai restaurant Executive Chef Michael O’Dowd will present a special five-course, seven-course and 12-course tasting menu. The five-course menu features corned wild duck, artisan cheeses, poached bosc pear marbles and Cedar River farms filet mignon. The seven-course menu features pan-seared sea of Cortez grouper complete with sun-dried tomato tapenade, Fossil Creek goat cheese and Pasilla chile flan, a filet mignon with smoked corn puree and cholla buds and concludes with a decadent spin on the classic root beer float. The elaborate 12-course tasting menu is complete with a champagne toast and features menu favorites including a celebration of truffles, foie gras, winter lettuces with pine-nut brittle, giant river prawn with white sturgeon caviar, a fall fruit elixir, braised lobster painted with foie gras essence and Sous-Vide Muscovy duck breast, Japanese Wagyu Kobe beef tartare and a trio of decadent desserts that are sure to leave the proverbial sugarplums dancing in your head. Reservations for the 12-course menu are accepted for the first seating from 5 to 6 p.m. and the second seating from 8 to 9 p.m. Prices for the meals range from $135 to $235. Kai’s dress code excludes shorts, hats and discourages denim.

Ko’Sin will also be offering a New Year’s Eve dinner. The menu will feature a choice of four entrées, including winter greens with goat cheese, petite filet mignon and cold water lobster tail with truffles mashed Yukon gold potatoes, Fair Trade coffee mole crusted veal chop and a slow-roasted game hen with winter squash cobbler. The three-course menu is priced at $80 for adults and $40 for children 12 and under. Reservations are accepted from 5:30 to 9:30 p.m.
