Celebrating Mexican Independence Day

In celebration of Mexican Independence Day, Aunt Chilada’s Tempe will offer a special buffet of traditional, but rare, Mexican dishes from 4 to 7 p.m. on Sept. 16.

“They’re traditional but they’re very rare to find in restaurants,” Rafael Torres, Aunt Chilada’s Tempe executive chef said. “You’ll find it here and there but it’s not a common item you’ll find on every Mexican restaurant’s menu.”

The menu will feature a red shredded pork pozole, charro beans and vegetarian dish calabacitas, as well as traditional favorites such as the beef chimichanga, chicken chimilingas and cheese enchiladas.

Cost is $13.95 per adult and $5.95 per child. The special menu is also available at the restaurant, located at 2021 W. Baseline Road in Tempe, for the days leading up to the buffet event.

Torres actually started working at the resort about 20 years ago as a dishwasher. He said he “moved up the ladder” and has been the chef at Aunt Chilada’s for about six years.

“Once you get into it, you have a passion for it, you tend to like it and it’s something that you grow into,” Torres said. “Personally I grew into it very well and I just enjoy what I do.”
