As the P.F. Chang's China Bistro brand took off over the past decade, little did anyone know that the flagship's secondary brand, Pei Wei, had something cooking of its own.

Giving a quicker, more casual spin on many of P.F. Chang's popular menu items, not to mention some original items to boot, the first Pei Wei Asian Diner opened eight years ago just across the freeway from Ahwatukee Foothills, at its current location near the intersection of Ray Road and 54th Street.

In what has certainly become a trend among affordable, casual establishments, Pei Wei helped write the book on the order first, seat yourself-style of dining overtaking today's culture.

Now, more than 150 locations have joined the fray since Pei Wei first opened at Casa Paloma, offering such favorites as chicken lettuce wraps, Dan Dan noodle bowls, Pei Wei spicy chicken and honey seared shrimp.
